The flavour would make it worth the hassle.

What might be harder for me, though, is disciplining myself to set aside an hour a day or a few days a week to prepare dough for making my own bread. After this, it makes so less sense to buy from a bakery. This was stupidly cheap, and it needed a total of four basic, easy ingredients. Patience is virtuous. Discipline might be more so.

It’s more that it can be less reliable, since it relies on wild yeasts, etc. and has a much longer prep time. Totally worth it, though.
